Fish is one of 9 food resources available in the game. It can be acquired by having citizens catch fish in fisheries or by trading. Fish are not physically seen when active in water, but they are always present in any body of water. This includes not only water placed by the game, but canals made by using the Dig Canal command.
Fish can be gathered infinitely in water, so fisheries can gather them as long as the settlement lasts, making fish an excellent renewable food source. The trade-off is that fish spoils faster than any other food. During the process of building a fishery, glowing arrows will appear on water tiles, being either yellow or green (as seen in the image below). This shows the availability of the fish in each tile.
Dondorians and Cantors have a preference for fish.
